maple-glazed salmon

i love salmon. yum yum yum. so healthy, so yummy, so nice to break up my typical habit of chicken chicken chicken. i normally make it the simple way…olive oil, lemon juice, etc. and even though that way is delightfully healthy and yummy, sometimes it just gets old.

i found this recipe online and decided to give it a try. cody now thinks i am queen of the world. i gladly took-up my throne.


2 salmon fillets

1/3 cup orange juice

1/4 cup maple syrup (only use real maple syrup. i promise it effects the taste if you substitute with aunt jemima or whatever is currently sitting in your pantry)

1 tablespoon salt

1 tablespoon pepper


1.combine syrup, oj, salt and pepper in a large sautee pan over medium heat. stir occasionally and let sit on the hot stove until well mixed. once well, mixed turn down to simmer, until sauce becomes thick.

2. sprinkle salmon with salt and pepper on both sides. coat each side with the maple sauce and put in oven on broil. depending on thickness, broil 8 minutes on each side until syrup has crystalized and salmon looks well-cooked and almost “crispy” on the top.

3. take out of oven. lightly coat with sauce once more and serve!


such an easy recipe with barely any ingredients, yet it makes for an absolutely amazing meal! i promise you will LOVE.
